The best and Tastiest Gluten Free Chocolate Coconut Chia Cupcakes/Muffins Ever!

So I have recently discovered/ created from modifying recipes the holy grail of healthy cakes to eat. This recipe is all gluten free, dairy free, and better than any cake I have ever tasted before! Plus you don’t feel guilty after eating it. I found the original recipe here  that one is amazing but I wanted something more portable, chocolatey, and I didn’t have Xanthan Gum. I hope you all try this and enjoy. I don’t know if these are muffins or cupcakes so I guess they are an epic solo category of tastiness!

So here is the Recipe:

1/2 cup (2 ounces) coconut flour
1 teaspoon baking soda
1/4 teaspoon fine sea salt

2 tablespoons cocoa powder (optional)

2 tablespoons chia seeds

4 large eggs, room temperature

1/2 cup coconut oil, (liquid)
1/2 cup agave nectar
2 tablespoon pure vanilla extract
1 teaspoon coconut extract
1/2 cup unsweetened shredded coconut

1. Heat oven to 350℉.

2. In a large bowl, combine coconut flour, baking soda, salt, cocoa powder, and chia, set aside.

3. In a medium bowl, whisk eggs with a hand mixer until lighter in color and slightly fluffy, about 2 minutes. Add coconut oil, agave nectar, extract, continue to beat until combined. Fold in flour mixture and shredded coconut until fully combined.

4. Put the mixture in the cupcake tins, bake for about 20 minutes. Cool on rack 10 minutes. Enjoy!

Super easy, tasty, and amazing. You won’t miss the gluten!
